Chef Subash Gurung’s journey is a story of resilience, redirection, and the courage to begin again. Born in Musikot Municipality–1, Gulmi District, Nepal, Subash grew up with a dream that many young Nepalese youth carry: to join the British Army. He trained with commitment and gave his best to achieve that goal, but life did not move in the direction he had imagined. The dream he had worked for did not come true, and for a moment, the path ahead seemed uncertain.
But failure did not stop him. Determined to create a better future, Subash left Nepal and travelled to Papua New Guinea, where he spent three years experiencing life away from home. That period taught him discipline, patience, and the reality of struggle in a foreign land. Later, he tried twice to travel to El Salvador in search of new opportunities, but both attempts ended in disappointment as he was returned from the airport. These repeated setbacks tested his confidence, but they also made him stronger.

At a difficult point in his life, his father became his greatest source of support. Instead of allowing Subash to feel defeated, his father encouraged him to learn a practical skill and build a new path. With that guidance, Subash joined sushi and Japanese cuisine training. What began as a second option slowly became a meaningful profession. He discovered focus, creativity, and discipline in Japanese cooking, and the kitchen gave him a new direction after several failed attempts in life.
Chef Subash later gained professional experience as a sushi cook, preparing sushi items according to recipes and standards, handling fresh fish, seafood, rice, sauces, garnishes, and accompaniments, while maintaining food quality, taste, portioning, and presentation. His CV reflects his experience in sushi preparation, food safety, hygiene practices, inventory support, teamwork, order taking, and food preparation. These responsibilities helped him understand that sushi is not only about technique, but also about freshness, precision, timing, and consistency.

Through hard work and dedication, Chef Subash earned the opportunity to work at Sanchyan Ramen, where he further developed his understanding of Japanese cuisine and grew as a culinary professional. Today, he continues his journey as a sushi chef in Cyprus. The dream he follows now may be different from the one he had as a young boy, but the determination behind it remains just as strong.
Chef Subash Gurung’s story proves that one failed dream does not mean the end of possibility. Sometimes, life closes one road to guide a person toward a path they were meant to discover. From Gulmi to international experience, from disappointment to professional growth, his journey stands as an encouragement for young chefs and youth everywhere: failure can become a foundation when there is family support, patience, skill, and the courage to keep moving forward.
