Chef Rajesh Kant Ojha

Chef Rajesh Kant Ojha stands among the Nepalese culinary professionals who have carried South Asian flavours into the heart of Europe with confidence, creativity, and entrepreneurial vision. Based in Athens, Greece, he has spent more than two and a half decades building a career around modern Indian cuisine, Himalayan flavours, and high-standard hospitality. His work reflects a rare balance: deep respect for traditional recipes and the courage to reinterpret them for a global dining audience.

Originally from Damak, Jhapa, Nepal, Chef Rajesh began his formal culinary path in 2000 with food production training at Shangri-La Tourism & Hotel Training Center. His early professional experience in Nepal took him through Hotel Xenial in Biratnagar and Hotel Vishuwa in Birgunj, where he strengthened his foundation in Continental cooking and professional kitchen operations. These early kitchens gave him the discipline, speed, and technical base that later helped him grow in international hospitality.

His career expanded beyond Nepal when he moved to the Gulf, working at The Garden Hotel in Qatar. There, he developed broader experience in multi-cuisine hotel operations and began taking on greater responsibility in food preparation, kitchen coordination, and guiding junior team members. This stage added international exposure to his skillset and prepared him for a larger professional journey in Europe.

Greece became the major turning point in Chef Rajesh’s career. In Athens and surrounding cities, he took leadership roles as Kitchen Head at Maharaja Kitchen in Piraeus, Indian Halveli in Athens, Indi Go Glyfada, and Om Namaste Restaurant near Acropolis. Across these roles, he became responsible not only for preparing food, but also for leading kitchen teams, maintaining consistency, developing menus, ensuring hygiene standards, managing presentation, and shaping the overall dining experience. His work helped strengthen the presence of Indian and Himalayan flavours in Greece’s competitive restaurant scene.

Today, Chef Rajesh is recognized not only as a chef but also as an entrepreneur. As the co-founder of Himalaya LP, he has been involved in operating a growing chain of five restaurants across Greece. Through these ventures, he has helped create dining spaces where South Asian cuisine meets Mediterranean hospitality. His restaurants are not simply commercial establishments; they are platforms where Indian, Nepalese, and Himalayan food traditions are introduced to a diverse international audience.

Although widely known for his command over Indian cuisine, Chef Rajesh remains deeply connected to Nepal. One of his strongest culinary commitments is to promote Nepalese gastronomy globally. In his menus, he gives dedicated space to Himalayan specialties, allowing guests in Greece to experience flavours inspired by Nepal’s mountains, spices, and food culture. For him, representing Nepal through food is not an occasional gesture; it is a central part of his culinary identity.

His creativity is especially visible in his signature dishes. The Euro-Mustang Chargrilled Fish brings together fresh Mediterranean seafood with the rustic spice character of Nepal’s Mustang region, creating a bold Greek-Nepalese fusion expression. Chicken 977, named after Nepal’s international dialing code, is his personal tribute to his homeland. His signature biryani, known for its layered aroma and depth of flavour, further reflects his mastery of spice balance, patience, and classical South Asian cooking technique.

Chef Rajesh’s professional strength lies in his ability to connect cultures through food. He understands that a successful restaurant is not built only on taste; it requires leadership, cost awareness, ingredient knowledge, guest understanding, menu strategy, team discipline, and consistency. His experience across Nepal, the Gulf, and Europe has given him the ability to read different markets while preserving the authenticity that makes a cuisine meaningful.

After more than 25 years in the culinary industry, Chef Rajesh Kant Ojha continues to stand as a bridge between the Himalaya and the Mediterranean. His journey represents the growing influence of Nepalese chefs in the global hospitality industry and shows how food can become a language of identity, innovation, and cultural exchange. Through his kitchens in Greece, he continues to honour his roots, celebrate South Asian flavours, and introduce Nepalese culinary pride to the world.
