Chef Nir Bahadur Palli Magar was born in a simple family in Galyang Municipality–10, Syangja, Nepal. After completing his early education up to SLC in his village, he moved to Pokhara to explore professional skills and training. Like many young Nepalese of his generation, he first dreamed of building something within Nepal. However, due to the difficult circumstances created by the conflict and shutdowns of that time, he decided to seek opportunities abroad—a decision that would eventually shape his career in the international bakery and pastry world.
His professional culinary journey started in Abu Dhabi, United Arab Emirates, at Al-Dhafra Tourist Village, where he entered the bakery and pastry field as a Commis 1. Those early years became the foundation of his craft. Working with dough, pastry, ingredients, timing, and production discipline, he began to understand that bakery is not only about recipes; it is about science, patience, accuracy, and consistency. His dedication soon opened the door to Le Méridien Abu Dhabi, where he worked in bakery and pastry and gained exposure to the standards of five-star hotel operations.

Chef Nir Bahadur Palli Magar's career continued to grow through some of the most respected hospitality brands in the Gulf. At Crowne Plaza and Staybridge Suites Yas Island Abu Dhabi, he advanced from Chef de Partie Bakery to Senior Chef de Partie and later became Complex Head Baker. Over several years, he developed strong leadership skills, managed bakery production for multiple outlets, and refined his knowledge of breads, pastries, displays, menu planning, quality control, and team coordination. His journey later took him to Crown Prince Palace Fujairah as Head Baker and then to Kempinski Al Othman Hotel in Al Khobar, Saudi Arabia, where he continued to strengthen his experience in luxury hospitality and high-standard bakery operations.
Today, Chef Nir Bahadur Palli Magar serves as Senior R&D Chef Baker at Al Hatab Bakery Industry in Sudair Industrial City, Saudi Arabia. In this role, his work goes beyond daily bakery production. He is involved in developing new bakery products, conducting kitchen trials, refining formulations, improving recipes, testing shelf life, supporting packaging decisions, and helping scale small-batch recipes into full industrial production. His expertise covers high-volume breads, artisanal sourdough, pastries, cakes, biscuits, clean-label recipes, and process parameters for large-scale manufacturing. This blend of hotel craftsmanship and industrial bakery innovation makes him a highly valuable bakery professional.

Over the years, Chef Nir Bahadur Palli Magar has built deep expertise in bread, bakery, and pastry, from artisanal preparation to commercial production. One of his strongest abilities is transforming a recipe from a small trial into a consistent, large-scale product without losing quality, texture, flavour, or presentation. He has a contribution to the development of more than 40 industrial bakery recipes across breads, cakes, and biscuits. Along with practical experience, he has strengthened his professional profile through HACCP Level 3 certification, Health & Safety Essentials, basic food safety training, fire training, IHG Merlin courses, and recognition from respected hospitality brands.
Beyond his technical knowledge, Chef Nir Bahadur Palli Magar is known for his strong willpower, persistence, and dedication to continuous learning. He enjoys travelling, watching sports, and discovering new ideas, but his strongest interest remains in improving himself as a bakery and pastry professional. From five-star hotel kitchens to palace hospitality and industrial bakery production, every stage of his journey has added a new layer to his skills and confidence.

Looking ahead, Chef Nir Bahadur Palli Magar hopes to return to Nepal and use the knowledge, skills, and international experience he has gained abroad to contribute to the bakery and pastry sector in his own country. His dream is not only to work as a successful chef baker, but also to bring new ideas, better techniques, and creative bakery solutions to Nepal. His journey from Syangja to the Gulf’s luxury hotels and bakery industries is a story of determination, learning, and the belief that skill becomes meaningful when it can one day serve one’s own homeland.
