Chef Bhol Bahadur Bishwakarma’s journey is a powerful reminder that leadership in the kitchen is not always born in culinary schools or prestigious hotels—it can begin in the fields, at the sink, and in the quiet determination to keep moving forward. Born in Likuwa Pokhari, Khotang, Nepal, he grew up in a rural environment where daily life demanded patience, physical effort, and resilience. He remembers working in the fields and walking for days simply to access basic supplies. Those early experiences shaped his character long before he entered professional hospitality, teaching him endurance, humility, and the value of hard work. When he eventually stepped into the culinary world, he did not begin with a title or position of authority. He started by washing dishes, learning from the ground up and understanding the reality of every role inside a professional kitchen.
From the dishwashing area, Chef Bhol gradually moved closer to the heart of cooking. He worked at the tandoor, endured the pressure of busy service as a commis, and continued advancing through discipline rather than shortcuts. His professional career took him through respected hospitality brands and luxury hotels in India and Nepal, including The Westin Gurgaon, Sheraton Hyderabad Hotel, The Den Bengaluru, Kathmandu Marriott Hotel, Hyatt Centric Soalteemode, and eventually Fairfield by Marriott in Kathmandu. Each kitchen became another stage of his development, exposing him to different systems, teams, cuisines, service standards, and leadership expectations. His rise through positions such as Commis, Demi Chef de Partie, Chef de Partie, Junior Sous Chef, Sous Chef, Chef de Cuisine, and Head Chef reflects more than career progression—it represents years of proving himself one responsibility at a time.

Over more than 15 years in professional kitchens, Chef Bhol has built strong expertise in Indian, Nepali, and international cuisines, with a particular foundation in Indian tandoor cooking and growing knowledge of contemporary culinary techniques, including molecular gastronomy and modern presentation. His experience goes far beyond cooking alone. He has been closely involved in pre-opening operations, kitchen setup, SOP development, banquet production, menu planning, food cost control, inventory management, team training, food safety, and large-scale event execution. From high-volume weddings and corporate conferences to à la carte dining and luxury hotel operations, he has learned how to balance creativity with consistency, and culinary ambition with operational discipline.

A defining feature of Chef Bhol’s leadership is that he respects every position in the kitchen because he has personally lived through many of them. He understands what it means to stand at the sink, sweat through a demanding service, work the tandoor, take instructions as a junior chef, and later carry responsibility for an entire team. This experience has shaped his belief in ownership and mutual respect. For him, no role is insignificant, and no team member should be overlooked. He believes a strong kitchen is built when everyone understands the value of their contribution and works with pride, accountability, and a shared commitment to excellence.

Throughout his career, Chef Bhol has also been recognized for his dedication, leadership, and professional performance. His achievements include being named Brilliant Executive of the Month, receiving recognition for his hard work during the COVID-19 pandemic, completing First Aid and CPR training, and earning certifications in departmental training, supervisory development, and managerial leadership skills through Marriott and Hyatt. These recognitions reflect an important part of his professional identity: he does not see leadership as giving orders, but as developing people, setting standards, and creating an environment where teams can grow together.

Today, as Head Chef at Fairfield by Marriott in Kathmandu, Chef Bhol Bahadur Bishwakarma carries with him every stage of his journey—from the fields of Khotang and the dishwashing sink to the leadership of a professional hotel kitchen. His ambition is not simply to produce excellent food, but to build strong teams, nurture young culinary professionals, and create a culture where dedication and pride are shared by everyone. His story is one of earned progress, resilience, and self-belief: proof that where you begin does not determine how far you can go. What matters is how much you are willing to learn, how honestly you respect the work, and how consistently you show up for the next challenge.
