For Chef Anil Tamang, pastry was never just a profession he discovered later in life—it was part of the atmosphere he grew up around. His earliest memories of food are connected to home, where his mother’s cooking introduced him to the warmth, care, and emotion behind every dish. At the same time, his family’s small bakery gave him a close view of baking, ingredients, preparation, and the quiet discipline needed to create something consistent every day. Those childhood experiences became the first foundation of his culinary identity.
Unlike many chefs who enter the kitchen after years of searching, Chef Anil stepped into the professional culinary world at a young age. At just 17, he began his internship at Marriott Hotel Kathmandu, where he experienced the pace, pressure, and structure of a hotel pastry and bakery kitchen. That early exposure helped him understand that pastry requires more than sweetness and beauty; it demands accuracy, patience, timing, and respect for detail. The lessons he learned there strengthened his confidence and confirmed his desire to build a career in pastry and bakery.
Before fully moving abroad, Chef Anil also carried the spirit of entrepreneurship. As the co-owner of Crave Bakery in Kathmandu, he was involved in running a boutique bakery focused on cakes and pastries. This experience gave him a different kind of learning—understanding customers, managing products, controlling inventory, developing ideas, and seeing how creativity must also work with business discipline. It helped shape him not only as a pastry chef, but also as someone who understands the responsibility behind every product served to a guest.

His career later expanded into the international hospitality industry, taking him to respected culinary environments in the United Arab Emirates. At Radisson Blu Resort Fujairah, he strengthened his bakery skills through bread, viennoiserie, buffet, and room-service production. At L’Atelier de Joël Robuchon Dubai, he gained exposure to VVIP catering and refined plated dessert service. His time with Meliá Hotels International Dubai further developed his experience in breakfast buffets, in-room dining, guest amenities, business lunches, large event setups, HACCP documentation, and high-volume pastry operations.
Today, Chef Anil is based in Dubai and works as Demi Chef de Partie – Pastry at The Arts Club Dubai, Nekkai Restaurant, a modern Japanese fine-dining concept. In this role, he leads the pastry section, manages daily mise en place, prepares desserts for lunch and dinner service, and works on refined plated desserts inspired by Japanese and French fusion techniques. His work requires creativity, speed, discipline, and the ability to maintain luxury-level consistency in a demanding private members’ club environment.
Chef Anil’s professional strengths include pastry and bakery production, chocolate art, dessert plating, recipe development, event menu preparation, HACCP and food safety standards, high-volume production, and fine-dining dessert presentation. His formal training has also added depth to his practical experience. He has completed an Artisanal Chocolate Class at ICCA Dubai, RSPH Level 2 in Food Safety and Hygiene from Le Cordon Bleu Paris, a Diploma in Hospitality Management, an Advanced Diploma in Culinary Arts, and +2 in Hospitality Management.
What makes Chef Anil’s story meaningful is the way he continues to carry his beginnings into his present work. Whether he is preparing bread, chocolate, plated desserts, cakes, or event menus, his approach still reflects the values he learned from his mother and his family bakery: use quality ingredients, respect the process, focus on details, and create with care. From Kathmandu to Dubai’s luxury pastry kitchens, Chef Anil Tamang continues to grow as a young pastry and bakery professional, driven by creativity, discipline, and a deep love for the craft that shaped him from childhood.
