Tom Yam Meets Gundruk at Bhojanlipi Swaad – 6

Bhojanlipi Swaad - 6

Royal Thai Hospitality in Bhaktapur will host Bhojanlipi Swaad – 6, an initiative by Chef Ghanshyam Kandel and Chef Durga Khadka, starting on the afternoon of Bhadra 4, Wednesday (20th August). This edition will bring together two iconic soups from distinct culinary traditions — Nepal’s beloved fermented dry greens soup and Thailand’s globally celebrated Tom Yam.

Fermented and dried greens, known locally as gundruk, are regarded as the soul of Nepali cuisine, cherished from the mid-hills to the Terai. More than just a taste, this traditional ingredient has been a lifeline for generations, sustaining communities during times of scarcity. Rich in probiotics, fiber, vitamins, and minerals, fermented dry greens offer both a deep connection to heritage and impressive nutritional benefits. Just as Tom Yam has captured worldwide fame, Chef Ganesh Dhakal is passionately championing fermented dry greens to gain global recognition.

This event carries extra significance as Royal Thai once served as the shooting studio kitchen for Chef Nepal, the country’s first-ever cooking reality TV show. Chef Dhakal, an esteemed judge on the show, is now leading the effort to unite Nepal’s heritage flavors with the vibrant taste of Thailand — a first-of-its-kind collaboration in Nepal.

Devi Prasad Sapkota, Coordinator of the Nepali Food Promotion Campaign, revealed that around a dozen dishes from both nations will be presented. While previous editions of Bhojanlipi Swaad focused exclusively on Nepali cuisine, this edition fulfills the long-standing dream of food lovers from both cultures by creating a harmonious fusion of flavors.

The visionaries behind the series, Chef Ghanshyam Kandel and Chef Durga Khadka, have dedicated their work to elevating Nepali cuisine on the global stage. Their research-based approach has made Bhojanlipi Swaad a respected platform for both culinary innovation and heritage preservation.

The festival will also feature Chef Ingwa Subba, the talented 2nd runner-up of Chef Nepal, alongside Young Chef Bikram Vix and Chef Man Bahadur Tamang, who will bring youthful creativity and energy to the event. The presence of Senior Chef Govinda Narsingh KC, celebrated for his mentorship and enduring contributions to Nepal’s culinary industry, will further underscore the unity and ambition of the country’s food community.

Adding to the festivities, a special Haritalika Teej program dedicated to women will run alongside the main exhibition, with high-profile guests from Nepal and Thailand expected to attend.

With its unique mix of tradition, health, and cross-cultural exchange, Bhojanlipi Swaad – 6 promises not only to satisfy taste buds but also to inspire pride in Nepali culinary heritage — making it a must-attend event for every passionate food enthusiast.
